There is something deeply comforting about knowing the slow cooker is working away in the kitchen while the day unfolds at its own unhurried pace. On busy weekdays or relaxed weekends alike, it feels like a quiet promise that supper will be ready, rich with flavour and warmth, without any last-minute fuss.


This slow cooker pulled pork has become one of those reliable, crowd-pleasing dishes that fits perfectly into family life. It is wonderfully simple, gloriously forgiving, and the sort of meal that brings everyone drifting back to the kitchen as the aroma fills the house.


The Magic of Slow Cooking


Pork shoulder is made for slow cooking. Given enough time and gentle heat, it transforms into meltingly tender shreds of savoury goodness. Adding fennel gives a subtle sweetness and a soft aniseed note that lifts the richness beautifully without overpowering it.


Ingredients


Serves 6–8

  • 1.8–2kg pork shoulder (boneless or bone-in)

  • 2 fennel bulbs, sliced

  • 1 large onion, sliced

  • 4 garlic cloves, crushed

  • 150ml apple juice or cider

  • 2 tbsp tomato purée

  • 2 tbsp brown sugar

  • 1 tbsp smoked paprika

  • 1 tsp ground fennel seeds

  • 1 tsp salt

  • ½ tsp black pepper

  • 2 tbsp cider vinegar

  • Optional: a pinch of chilli flakes for gentle warmth


Method


  1. Place the sliced fennel and onion in the bottom of the slow cooker to create a soft, flavourful bed for the pork.

  2. In a small bowl, mix the tomato purée, brown sugar, smoked paprika, ground fennel seeds, salt, pepper, and vinegar with the apple juice or cider.

  3. Sit the pork shoulder on top of the vegetables and pour the sauce over the meat.

  4. Cover and cook on low for 8–10 hours (or high for 5–6 hours) until the pork is falling apart and beautifully tender.

  5. Remove the pork to a large dish and pull apart with two forks. Return the shredded meat to the slow cooker and stir through the cooking juices and softened fennel.

  6. Taste and adjust seasoning if needed.


The result is succulent, sweet-smoky pork threaded with soft, fragrant fennel that almost melts into the sauce.


How to Serve


This is the sort of dish made for sharing. Pile the warm pulled pork into homemade fresh bread rolls or crusty batons, letting the juices soak into the crumb. Add a spoonful of crunchy slaw if you like, or simply serve with a generous bowl of salad for something lighter.
