Homemade Soup: Comfort, Savings, and a Soft Spot for Carrot & Coriander

There’s something deeply reassuring about a pot of homemade soup quietly simmering on the hob. It feels like care in its simplest form — nourishing, economical, and endlessly comforting. When life feels busy or budgets feel tight, soup is what I come back to again and again.
One of the biggest reasons I love making soup at home is how far it stretches. A handful of vegetables, a stock cube, and a few cupboard staples can turn into several meals without much effort. It’s one of the easiest ways I know to save money without feeling like I’m missing out. In fact, it often feels like a small luxury rather than a compromise.
Soup is also brilliant for using what you already have. Slightly soft carrots, an onion that’s been hanging around too long, herbs that need using up — they all find a second life in the soup pot. Nothing goes to waste, and there’s a quiet satisfaction in turning odds and ends into something warming and filling.
Carrot and coriander, though, will always be my favourite. It’s the soup I make without thinking, the one I crave on cold days, and the one that somehow tastes better the next day. There’s something about the natural sweetness of carrots paired with the gentle warmth of coriander that feels perfectly balanced. Simple, but never boring.
I like how adaptable it is, too. Sometimes I roast the carrots first if I have the time, other times everything goes straight into the pan. A splash of coconut milk makes it feel indulgent, while a squeeze of lemon brightens it when it needs lifting. No two batches are ever exactly the same, and I love that.
Beyond the savings and the flavour, homemade soup slows me down. Chopping vegetables, stirring the pot, waiting for it to come together — it’s unhurried and grounding. In a world that often asks for speed, soup allows for patience.
When I portion it up and tuck containers into the freezer, I know I’ve done something kind for my future self. A ready-made lunch, a bowl warming in the slow cooker while I'm on a winter walk, a reminder that good food doesn’t have to be expensive or complicated.
For me, homemade soup is more than just food. It’s comfort, common sense, and care — and carrot and coriander will always be at the heart of it.
This recipe is so flexible, cheap to make at under £1.50 plus super nutritious and taste amazing, so just relax and enjoy the process,
1 Onion chopped
1 Potato peeled and chopped, or a sweet potato will work too.
1 tsp ground coriander
approx 440g carrots
1 Table spoon oil, I use olive but any cooking oil will do
1.2 l chicken or veg stock
Handful of fresh coriander chopped
Season with salt and pepper to taste
Place the chopped onion in a pan with the oil and cook to soften the onion. Add the potato and dried coriander to the pan and cook for approx 1 min and then add the carrots and stock.
Cover and simmer until the vegetable are soft.
Tip into a blender or use a stick blender and add a handful of fresh coriander and blitz. Season to taste.
You can really play around with this recipe, try roasting the carrots or using sweet potato and find your favourite way to make it. The recipe freezes so well, so I often take advantage of when veg are on offer around Christmas time and make a few batches for the freezer!
