Speedy Chorizo Spaghetti Recipe
Back in the days when I had all three kids still living at home and it was one of those days where I was rushed for time ( you know the ones, where you think you're on top of things and then a spanner gets thrown into the works and time just runs away from you) and the family are coming in and all hungry. I would turn to my speedy Chorizo spaghetti, not just because it’s super quick and cheap to make, but also because they all absolutely loved it! Pasta always fills them up and this can be on the plate in under 20 minutes and that’s not bad going when they are hovering in the kitchen under my feet asking how long until dinner.
This recipe feeds a family of four at 77p per person
Ingredients
400g of value dried spaghetti
200g chorizo sliced or chopped.
50g of grated Parmesan cheese.
3 large free range eggs
A few twists of freshly ground pepper.
Method
1. Pop the spaghetti into a pan of boiling water . Put the lid on and bring to boil until cooked through.
2.While the spaghetti is cooking, finely grate the Parmesan and put to one side and beat eggs with black pepper and put to the side also.
3. Pop the chopped or sliced chorizo into a wok and heat until it begins to crisp; no need to add any oil to the pan as the fat from the chorizo will cook it.
4. Drain the spaghetti and once the chorizo is beginning to brown add the spaghetti to the wok.Then immediately add the cheese and egg and remove from the heat and toss the ingredients together.
5.The heat from the chorizo and spaghetti will melt the cheese and cook the egg.
