  • Smoky BBQ sauce for basting and remainder for dipping. (1 cup tomato ketchup, 1/2 cup brown sugar, 2/3 cup cider vineger, 1/4 cup molasses, salt and pepper to taste, and boil in a saucepan for 10 mins )

  1. Prep the chicken

    Remove any giblets from the cavity and pat the chicken dry with kitchen paper. This helps the rub stick better and the skin to crisp up nicely.
