In a house where the front door never seems to stay closed for long — early shifts, late finishes, band practice and martial art classes, heading back out again five minutes after they’ve walked in — food needs to be quick, filling and reliable. That’s exactly why these freezer sausage, egg and cheese muffins have become a staple in my kitchen.
They started as a way to make sure there was always something hot and homemade ready for a bleary-eyed early start, but they’ve turned into the ultimate grab-and-go solution for the whole family. But where they absolutely come into their own in my house is for a night shift worker to take as a in between snack to keep them going on a long shift.

Living with a shift worker means traditional mealtimes don’t really exist. Breakfast might be at 4:30am for one person, while someone else is rushing out the door between work and a club.

Ingredients
You only need a few simple things:
8 sausages, make it interesting by switching up sausage flavours, our household favorite is caramelized onion!
6 large eggs
100ml milk
1–1½ cups grated cheese (cheddar works perfectly) or cheese slices
8 English muffins, sliced in half
Salt and pepper
Optional extras:
Cooked bacon or ham
Chopped peppers
Spring onions
Spinach
This is a brilliant “use what you have” recipe.
How to Make Them
1. Cook the Sausage
Fry the sausages until golden and cooked through. Set aside to cool,then slice in half long ways.
2. Make the Egg Mixture
Whisk together:
Eggs
Milk
Salt and pepper
3. Bake in a flat baking tin
Pour the mixture into a greased baking tin and bake at 180°C (160°C fan) for about 15–18 minutes, until set.
Let them cool and cut into 8 portions,before removing.
4. Assemble the Muffins
Layer:
Bottom half of the English muffin
1 sausage cut in half
Sprinkle of cheese or cheese slice
slice of cooked egg
Muffin top
How to Freeze
Once completely cool:
Wrap each muffin in baking paper or foil
Place in a freezer bag or container
Label and freeze
They’ll keep for up to 3 months.
How to Reheat
From frozen:
Microwave for 1–2 minutes
Or microwave, then toast briefly for a crisp muffin
From chilled:
About 45–60 seconds in the microwave
Perfect for eating on the way out the door
